- Observed unlabeled bacon container being stored in cooler. Per manager, they received shipment of bacon at 7 am. Temperature logs showed bacon was received at proper temperature and stored in cooler immediately. Ensure all food items are correctly date labeled and used within 7 days from prep.
- Observed employee dumping sanitizer solution in handsink. Ensure handsinks are used for handwashing only and not as a dump sink.
- Observed employee without an effective hair restraint. Ensure all food handlers are wearing effective hair restraints.
- No chlorine sanitizer ppm in dishwasher. Employees are manually wash, rinse, and sanitizing dishes in meantime. Manager showed receipt of new dish machine that was ordered, dated 11/17/2015.
- Observed debris buildup on handle bars of standing cooler, kitchen microwave, and reach in cooler across stove. Ensure all non-food contact surfaces are routinely washed, rinsed, and sanitized.
- Observed employee using wiping cloth to sanitize non-food contact surfaces with barehands. Then touch stack of plates on shelf then continue cooking food on stove. Instructed employee to wash hands after changing tasks and touching chemicals. Employee rewashed hands and re-wash, rinse, and sanitized plates.
