  • Observed unlabeled bacon container being stored in cooler. Per manager, they received shipment of bacon at 7 am. Temperature logs showed bacon was received at proper temperature and stored in cooler immediately. Ensure all food items are correctly date labeled and used within 7 days from prep.
  • Observed employee dumping sanitizer solution in handsink. Ensure handsinks are used for handwashing only and not as a dump sink.
  • Observed employee without an effective hair restraint. Ensure all food handlers are wearing effective hair restraints.
  • No chlorine sanitizer ppm in dishwasher. Employees are manually wash, rinse, and sanitizing dishes in meantime. Manager showed receipt of new dish machine that was ordered, dated 11/17/2015.
  • Observed debris buildup on handle bars of standing cooler, kitchen microwave, and reach in cooler across stove. Ensure all non-food contact surfaces are routinely washed, rinsed, and sanitized.
  • Observed employee using wiping cloth to sanitize non-food contact surfaces with barehands. Then touch stack of plates on shelf then continue cooking food on stove. Instructed employee to wash hands after changing tasks and touching chemicals. Employee rewashed hands and re-wash, rinse, and sanitized plates.

  • Observed unlabeled bulk foods stored in facility. There was a bin located next to the True Freezer and a metal can with foil as a cover on the dry storage shelf. Label all bulk foods removed from original container.
  • Observed sliced tomatoes in prep cooler labeled 8/20, this is one day past expiration. All potentially hazardous foods must only be held for 7 days. The manager voluntarily discarded the tomatoes.
  • Observed sanitizer solution in bucket in kitchen to have no measurable concentration of chlorine. Sanitizer concentration in bucket must be maintained between 100-200 ppm. An employee corrected this on site.
  • Observed the outside of the utensil storage drawers located next to cook line to have build up of debris. Clean routinely.
  • Observed pans being stored on floor in dry storage room. Clean and sanitized equipment must be stored 6
  • Observed build up of debris beneath 3-compartment sink. Clean routinely.

  • Found white gravy on the steam table at 120F. Maintain at 135F or higher. The cook had just had the gravy out of the steam table to switch to a smaller pan. The cook immediately pulled and reheated the gravy to 165F before placing it back on the steam table.
  • Found individual ranch dressings in glass door dessert cooler labeled 3/23/15. They must be used within 7 days. Corrected--They were discarded.
  • Employees in the kitchen were not wearing hats or hairnets. Provide hats or hairnets.
  • The cook had a lot of flour build up on the front of her shirt from making biscuits and cinnamon rolls this morning. Suggest wearing an apron while doing these tasks or bringing a clean shirt to change into when done.
  • The counters and shelves in the kitchen had a build up food debris. Clean and sanitize these areas.
  • Found food/grease build-up on stove. Clean and sanitize it.
  • The heating/cooling unit in the dining room outside the kitchen had a build up of food, silverware and debris inside it. Clean it.
  • Found build-up of debris on floors. Clean the floors.
  • The ceiling in the dry storage room is unfinished. Finish it so that it easily cleanable and food is protected during storage.
