Found the chlorine sanitizer wiping pail in the kitchen at >200 ppm. Maintain at 100-200 ppm. Corrected to 200 ppm.
There was no cooldown documentation available for this year. Complete a cool down during the day for grilled chicken and taco meat and submit to TCHD, Attn: Kim. Document how it is cooled down and temperatures every hour until the food reaches 41°F. Keep this documentation in your HACCP plan.

Found 2 #10 cans of jalapenos and one can of pears and 1 can of chili on the dry storage shelves with bad dent in the end seams. Manager immediately pulled them and marked them for return/credit.
Observed a large build up of ice on the shelves, food boxes, and floor in the walk in freezer under the condenser fans. Remove the ice build up and have maintenance done on this unit to prevent further ice/condensation build up.
