- No paper towels at hand-wash station located in food preparation area
- Provide paper towels to ensure adequate hand-washing
- Fried potatoes at 100 degrees, corn dogs at 150 degrees and fried burritos at 100 degrees in hot holding warmer
- Hot holding is ok but food should not have been stacked four inches high
- Ensure to spread food out more evenly to allow food to be kept at or above 135 degrees
- Some items in walk-in unit at 41 degrees but observed cheese and yogurt at 45 degrees
- Temperatures on other side of walk-in were 32 and 39 degrees
- move cold holding area for food to the other side of walk-in unit
- Do not sell food above 41 degrees.
