  • Food temperatures in walk-in and beverage/coffee area refrigerators immediately adjusted
  • Recheck of food temps resulted lower, beef at 42 degrees in walk-in and butter at 45 degrees in beverage fridge
  • All refrigeration units shall be capable of maintaining internal food temperatures at required maximums - 41 degrees or lower for potentially hazardous food (perishable food) and 45 degrees or lower for dairy/milk.

  • Observed cook handle/serve a side of rice without washing his hands after wiping his hands on soiled wiping cloth

  • Plastic container of flour with dust bunnies laying on top of flour
  • Flour was thrown out by chef
  • Lids must be kept on food items to avoid contamination
  • Knife with lettuce debris in clean storage area
  • Keep food-contact surface areas clean in storage.
