Violations:
0820 A 1 - Corrected During InspectionCritical Hotdog chili holding at 118F. Operator states that he rapidly heated up chili around 9 AM (to 165F) and then turned the burner down. Explained that the chili temperature must not drop below 135F. Chili was reheated back to 165 and then maintained at or above 135F.
1530 - Operator does not have test strips to monitor the concentration of Cl. Obtain Cl testing strips.
1700 - Corrected During InspectionCritical Chlorine sanitizing solution had a concentration >200 ppm. Chlorine solution is to have a concentration between 50-100 ppm and must never exceed 200 ppm. Solution was remade to 100 ppm
1750 - Coffee container being reused to store chili. Manufacturers containers may not be reused. Use only approved multiuse containers.
Comments:
-Use more ice packs for adequate refrigeration in cooler. -Be very aware of using handiwipes after eating or smoking and before resuming food handling.
