Observation: Flies seen in kitchen. Harborage conditions exist: clogged floor drains, dirt and greese built up on Non-Food contact surfaces.
Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

Observation: The raw chicken was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria. Final cooking temp was 157°F
Correction: Continue to cook the stuffed food to heat all parts to 165°F or above for 15 seconds.

Observation: chicken, salsa, tomato, and cheese cold holding at improper temperatures on end salad prep RI unit. Was holding between 47-55°F
Yogurt under the salad RI prep holding at 60°F.
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Observation: Harborage conditions exist, flys seen in kitchen area. Fly fan on back door on a timer and turns off if door is left open too long.

This inspection is to address potential health/safety issues due to a fire at the bar. The right side of the bar has no electricity. All refrigeration units are located on he right side of the bar and are cold holding at proper temperatures. The fire extinguisher suppressant discharged on the equipment. Equipment has been cleaned. The staff were concerned about the potential contamination of liquor from the suppressant. I recommend that if they believe the liquor might have been contaminated that it should be discarded. The ice box is not currently being used, it was above the fire and is going to be pulled out and thoroughly cleaned before it is used again.
