The walk-in cooler is 43 degrees Fahrenheit. A repair was made yesterday on the unit and potentially hazardous food storage is now permitted in the unit. All refrigeration in 2007 must maintain 41 degrees Fahrenheit or less.

The purpose of this visit is due to a fire in the furnace. There was a build-up in the furnace and it began to smoke heavily into the building this morning. There is no fire damage, however, smoke residue was observed on exposed food contact surfaces in the kitchen. Clean and sanitize all uncovered utensils. Discard all open food containers that did not have the package liner closed inside of the boxes of food.

All potentially hazardous foods, i.e. meats, cheese, milk, located in the Beverage Air cooler and the walk-in cooler need to be discarded.
Ambient air temperature near the stove is 115 degrees Fahrenheit Ambient air temperature near the 3-vat sink is 101 degrees Fahrenheit. The kitchen temperature is too warm to allow refrigeration equipment to function properly. I recommend the installation of an air conditioner to allow the proper functioning of the refrigerators.
The Beverage Air cooler and walk-in cooler need to maintain 41 degrees Fahrenheit or less before food can be stored in them.
