Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Comments:
Recheck of cooling methods and temperature control on Mccall refrigeration unit-
Cooling methods are satifactory today. Refrigeration unit appears to be holding most PHFs at 41F,however, a half pan which is full of flounder was 47Fand a half pan full of shrimp was 43F(large volumes).. Lower thermostat on unit to accomodate lower holding temperatures and store PHFS in shallow pans. Raw fish may also be stored in contact with ice in the refrigeration unit.
