This last minute inspection and corrections could all be avoided if payment was received on time. During reconstruction of dining room no table to be set up with anythink including salt and pepper shakers. Care to be taken so no contamination occurs at this time.

Ranch dressing in lower make 42 F. Once dressings are placed in upper unit do not keep for another evening. (PIC stated a new unit has been ordered). Salad refrigerator is still not working. (Another unit has been ordered). Bar unit repaired, milk at 37 F. Water pressure has increased at bar handsink. Hood filters, grill area, wall of cookline, olive oil shelf, mixer head, dry good bin have all been cleaned.

Spoke with Adam on phone. Dishmachine was turned down that same evening. Whole prime rib was 145 F at 8 PM and cooled to 69 F by 10:10 PM. Roast was about 13 lbs. Make table on line had 38 F chicken and 38 Alfredo sauce.
