Observation: Water/condensation leaks inside the walk-in freezer causing an accumulation of ice on surfaces inside the freezer
Correction: Repair and defrost unit
- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
Observation: Chlorine sanitizing solution used was not at an acceptable concentration for the wiping cloth bucket
Correction: Adjust the chlorine sanitizing solution to a level of at least 50 - 100 parts per million
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust on the following nonfood-food contact surfaces: Fan at the Taylor machine.
Correction: Maintain nonfood-contact surfaces of equipment clean.
- Lighting, Intensity
Observation: Additional lighting is needed in the walk-in refrigerator and the walk-in freezer - area in back of the units is very dark
Correction: Provide at least 10ft. candles of light intensity in the walk-in refrigerator and walk-in freezer

Observation: There was no temperature measuring device located in the sandwich preparation unit.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

Observation: Door seals/gaskets at the sandwich preparation unit are damaged/torn & cracked
Correction: Repair or replace refrigerator door gaskets/seals

Observation: The cavity of the microwave oven is observed soiled.
Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
- Lighting, Intensity
Observation: Area in back of the walk-in freezer are very dark, no light in those areas
Correction: Provide additional lighting as needed
