Notes: 1) Facility had an extra thermometer on hand to replace the thermometer in the Silver King Cooler (drive thru). 2) Facility was very clean and well maintained at the time of inspection.

Violation: 3180 - under the racks in the in the walk-in cooler and freezer is noted in need of cleaning. All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Comments:
Complaint about employee working @ drive thur was wipping bloody hands with rag and got blood on customer's cup. Conducted onsite inspection. Manager aware of issue, employee had paper cut and wasn't aware of it. Manager removed employee from drive thur and had employee wash hands and bandaged and went back to work.

Comments:
Complaintant came in on Aug 17, 2006 They said the establishment was dirty, had alot of flys, trash and food on the floor, trash cans overflowing. Conducted a on site inspection. The manager on dutie (Amanda) was aware of the complaint. Says it was just after a "school bus rush" and they hadnt had a chance to clean up yet. With reguards to the flys, facility are taking measures to correct the problem with use of pest control. At the time of inspection the facitlity was clean and in good order. No flys persent at time of inspection. In reguards to male employee and his family in kitchen area, that employee is no longer employed by the facility.

Sanitizer bucket: 100PPM, 3 bay sink: 100PPM Burger King uses time as a control: onions and lettuce 8 hours, grilled onions and cheese 4 hours, and ham 2 hours. All foods are marked with the hour they are to be disposed of. Great job using gloves and wearing hats. Dining okay, fire suppression 8/05, hood cleaned every 3 months, garbage collected 2 times per week, Ehrlich pest control, Valley protein collects grease. Remember to clean fan covers in walk-in coolers. Thanks
