Restaurant is currently undergoing dining room remodel. Drive-thru open only. Plastic sheeting is being used to separate work areas from kitchen. Kitchen area appears clean and organized. Handsinks are stocked with soap/towels/sign. Employees are washing hands and wearing gloves when handling ready to eat foods. All ready to eat foods are properly date marked for disposition. Employee health policy available in office. Foods not being controlled by temperature are being properly marked to insure use/discard within 4 hrs. Discussed the following with manager: replacement of thermometer in salad prep refrig, gasket on front salad refrigerator still requires replacement (or replace refrigerator).
