Employee health policy is available in kitchen. Foods are properly date-marked for disposition. Observed proper use of time as public health control (4 hrs). Good food/equipment temperatures observed. Good sanitizer concentrations observed in 3-compartment sink and wiping cloth buckets. Discussed the following with manager: proper storage of employee drinks
  • Utensils - In-Use - Between-Use Storage
    Observation: Dispensing utensils improperly stored between uses in bulk sugar container and at drive-thru window.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor in mopsink and in front of ice machine not graded to drain.
    Correction: Grade floors to drain where water flush cleaning method are used. Grout should be sufficient enough not to allow water and food to be trapped between tiles.

Ready to eat foods are properly date-marked. Ready to eat foods are properly marked for time as a public health control. Employees are monitoring/logging equipment and food temperatures on regular basis. Discussed the following with management: floor throughout kitchen must be sealed, smooth, and easily cleanable (floor tiles must be replaced)

    Observation: The door gasket to the front under-counter refrigerator is in poor repair. This issue has been noted previously.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor or floor covering in kitchen next to ice machine is not smooth and easily cleanable. This issue has been previously noted.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable. Please contact this department when repaired.

Restaurant is currently undergoing dining room remodel. Drive-thru open only. Plastic sheeting is being used to separate work areas from kitchen. Kitchen area appears clean and organized. Handsinks are stocked with soap/towels/sign. Employees are washing hands and wearing gloves when handling ready to eat foods. All ready to eat foods are properly date marked for disposition. Employee health policy available in office. Foods not being controlled by temperature are being properly marked to insure use/discard within 4 hrs. Discussed the following with manager: replacement of thermometer in salad prep refrig, gasket on front salad refrigerator still requires replacement (or replace refrigerator). Kitchen ceiling is to be replaced in March 2013. At this time, floor tiles throughout kitchen will also be repaired/replaced.
