Conducted whole school inspection found no problems. Spoke with manager about the FDA’s decision to make cut tomatoes a “Potentially Hazardous Food” PHF’s. If cut up, tomatoes must be refrigerated at 41 Deg. F or less or discarded after four (4) hrs with no refrigeration. Also reminded manager about the March 2007 deadline to have all refrigeration units to 41 Deg. F or less by this date.
