Observed the low boy refrigeration unit is not operating properly (not maintaining foods at 41 degrees or below). Repair the refrigeration unit (foods have been placed in the walk-in vault).

1770 A - Critical Observed a dirty food strainer hanging on stove. Wash, rinse, sanitize utensils after usage.
0480 - Observed several containers of sauces/liquids in the walk-in vault with no identification labeling (dressings). Supply identification labels on all foods.
0550 - Observed the scooper used to dispense rice atop a plastic container of water. Store dispensing utensil directly in product with the handle upward or if storing in water, it must be 135 degrees or above.
1750 - Observed jars in walk-in labeled a certain food item but has other product in it (ex. cashew jar has sugar water in it). These are single use items. Do not reuse.

No roaches observed on this inspection. Facility was serviced by pest control on 8/29/07.

Comments:
This is a reinspection for roach abatement in the kitchen. Per the invoice from the pest control operator, the facility has been treated on 7/24/07 and will be treated at least once a month thereafter.
