May 27, 2009 (Routine)

• 0640 - Observed bottles of spices (white plastic) on shelving on the cook's line with no covers/lids.
  Provide a cover/lid on all foods.
• 1770 C - Observed the 4 door container on the cooks line that is encrusted with food debris (spices?).
  Clean the outside of the container.
• 1800 - Observed soiled gaskets to the refrigeration drawers on the cooks line. Observed soiled shelvings on the cooks line.
  Clean the gaskets. Clean the shelvings.
• 3080 - Observed 37 foot candles of lighting on the cooks line; should be 50 foot candles or more.
  Replace the inoperable light bulbs.

February 26, 2009 (Risk Factor Assessment)

• 0470 - Critical Observed some foods in the True freezer that are not tightly wrapped/covered.
  Provide a cover/lid on all foods.
• 1700 - Corrected During Inspection Critical Observed the lack of the sanitizing solution being fed into the dishmachine.
  Have the machine serviced/repaired. Set up and use the 3 compartment sink until repaired (wash, rinse, sanitize, air dry).

November 20, 2008 (Risk Factor Assessment)

August 26, 2008 (Routine)

• 3030 - Corrected During Inspection Observed the lack of paper towels at the kitchen sink.
  Supply paper towels at all sinks used by foodservice personnel.
• 3340 - Corrected During Inspection Critical Observed spray bottles of toxic items hanging on cart with condiments.
  Do not store toxic items with foods. Removed.
• 0790 - Observed a bowl of chicken being thawed in standing water.
  Thaw foods underneath cold running water 70 degrees or below; in the microwave; or in the refrigerator.
• 2890 - Observed two inoperable light bulbs in the hood.
  Replace the inoperable bulbs.
