    Correction: Owner to find a spot to hold TCS foods in this unit at or below 41 F. Owner relocated foods.

Data log tag review of walk in temperature and check on sandwich line temperature. There was definitely a problem with walk in. Service tech was on site and just finished repair on both walk in and sandwich line. I will leave the data log tag inside walk in to verify correction. Ice and water was added to sandwich line this weekend since previous tech could not repair. PIC to call me for permit renewal.

    Observation: One line has been turned off because motor was making noise. Food temps were elevated. Walk in refrigerator had marginal temperatures.
    Correction: More ice was added. Service tech arrived to work on unit and needed parts. Data log tag was placed inside walk in for the weekend. I will come in Monday to check.

Remember when removing from freezer put date on product. You have already lost one day. Provide test strips for sanitizer. Recommend prechilling cans of tuna prior to making mixture. Have gauge on dishmachine serviced. During final rinse cycle pressure gauge and final rinse gauge did not move. Clean pipes for drink system.
