    Observation: Working containers of cleaning solution was not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. Corrected.

Follow up to issue permit. Light in back has been repaired. Metal stemmed thermometer has been provided. Chlorine test kit has been provided. All managers have had Serv Safe. Permit issued.

There are items that still need correction before permit can be renewed. I will return tomorrow. PIC agreed to have these done by tomorrow.

    Observation: The person in charge could not provide a food temperature measuring device that registers cold temperatures. (0-220 F is recommended)
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment. This to be corrected as soon as possible.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solution in the bar machine.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Lighting, Intensity (repeated violation)
    Observation: Lights not working in back.
    Correction: Repair lighting.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Ceiling panels in ice machine room are stained.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Replace ceiling tiles with smooth cleanable panels. Panels are being replaced at this time.

    Observation: The nonfood contact surface of the shelves is not corrosion resistant, nonabsorbent, and/or smooth. Cardboard on one set, another made from particle board.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

    Observation: Water from the handwashing sinks were measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens. Maintenanace reset heater. Water temperature is increasing. Rechecke at 100 F.

    Observation: Ice machine is leaking. Faucet at 3-c is not operating properly.
    Correction: Repair plumbing issues.

    Observation: Lights not working in back or by water heater and above pizza oven.
    Correction: Repair lighting.

    Observation: Wall by ice machine is not maintained in good repair (holes). Ceiling panels in ice machine room are stained.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Replace ceiling tiles with smooth cleanable panels.

Chemical shelf is made out of particle board. It is not cleanable. Seal for cleanability. Remember to datemark ricotta cheese upon opening. Provide a metal stemmed thermometer that ranges from 0 to 220 F in 2 degree increments. It is flu season please review employee health policy with staff.
