- 1320 - Repeat There was no temperature measuring device located in the homestyle refrigerator or the lutou refrigerator or the 2 door Silver King refrigerator.
Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature. - 1570 - Repeat The can opener blade is rusted and dull. There are metal shards on the cog wheel so the blade is dull.
Disassemble the can opener, clean and sanitize the assembly, remove and replace the blade. Can opener blades must be kept sharp to prevent creation of metal fragments that can contaminate food in the can when opened.

Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles. - 0820 A 2 - Critical Cold holding at improper temperatures: MULTIPLE foods in different refrigerators and on a shelf are above 41 degrees.
Some was discarded and some was relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below. - 1150 - The non-food contact surface of the shelves which are lined with cardboard which is greasy are not designed or constructed to be easily cleanable.
Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. REMOVE the cardboard and clean all the shelves. - 1320 - There was no temperature measuring device located in the There were no thermometers in the 2 door Silver King, the white home style refrigerator, the chufan prep unit and the one outside the walk in and the two inside the walk in are not working correctly.

If not, it must measure 0 to 200 degrees in 2 degree increments. - 1530 - There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Obtain chlorine test papers so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. - 1570 - Repeat The can opener blade is rusted and dull. There are metal shards on the cog wheel so the blade is dull.

Clean and sanitize these surfaces for food contact. While you are cleaning the kitchen, ALL food contact surfaces must also be clean. There is one exception: ALL of the stainless steel food containers on the shelf above the 3 compartment sink are clean to sight and touch - GOOD JOB. - 2310 - Corrected During Inspection Critical The ONLY handwashing facility located in the kitchen is blocked with a number #10 can and other things, preventing access by employees for easy handwashing.
Access to the handwashing facility identified above is to be available during all hours of operation. Remove the stuff preventing its use. - 3020 - Soap was not provided at the hand washing lavatory in the window cleaner in a spray bottle was supplied.
Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands. Soap in a large container was provided, BUT YOU NEED TO GET A SMALL PUMP UNIT. - 3180 - Repeat The entire kitchen and back room needs a good cleaning - floors, walls, under equipment, inside equipment, shelves,
The entire kitchen and back room must be cleaned. Everything that is not used on a daily basis needs to be thrown away. - 3240 - Repeat Handwashing facilities are unclean and not maintained so water will drain out.
Keep handwashing facilities clean and clean the drain line so to encourage proper handwashing.
The temperature problems with the walk in refrigerator, the white home style refrigerator, the chufan unit, and the 2 door Silver king must be address TODAY. I will re-turn at the end of this day, around 4 PM. ALL the other items MUST be addressed by 12 November 2008 when I return
4:30 PM The refrigeration man has been here and all units are 40 degrees, except the home style unit which will be taken out of service.
