Violation: 0900 - Repeat Insufficient information is provided on the labels of the packaged foods in the food establishment. Food packaged in a food establishment for customer self service shall include labels that contain the following information: 1. the common name of the food, 2. the list of major ingredients including artificial colors or preservatives, 3. the total net weight or quantity of the food, 4. the name and place of business of the food manufacturer, packer, or distributor, 5. the name of the food source for each major food allergen contained in the food,6. nutrition labeling and, 7. for any salmonid fish containing canthaxanthin as a color additive, the labeling of the bulk fish container, including a list of ingredients, displayed on the retail container or by other written means.
Comments:
The facility is working towards correcting the labeling violation. Since the last inspection more than half of the items are now properly labeled. Recommend the gasket on the left door of the prep table be replaced. (replacing the gasket will reduce the amount of cold air lost.

Violations:
0470 - Critical Raw foods of animal origin (shell eggs) stored over ready-to-eat (RTE) food in the refrigeration unit. Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food such as vegetables, and cooked RTE food. Raw foods can be stored on the lowest shelves possible with RTE foods above.
0820 A 2 - Critical Food in the prep table cold holding at improper temperatures. Adjust/repair/replace the unit to cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria.
0840 - Critical The ready-to-eat (RTE) foods in the cooling units were not discarded by the ""consume by"" date. Discard the food at this time and ensure all RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Comments:
Other options besides labeling include: 1) placeing the items in a anrea where the consumer cannot serve himself/herself 2) not packaging the food 3) labeling a container that holds the packaged foods for self service 4) other ideas may be acceptable, please contact the health department to verify that it would be appropriate.

Violations:
0450 - Critical Employees observed handling ready-to-eat (RTE) food with their bare hands. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
3220 - Mops not hung up to air dry. Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
3660 - Permit is not posted in a place where it is readily observable by the public. Post the permit in a place where it is readily observable by the public transacting business with the establishment.
