Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

Observation: Back flow device (spring to close type) in poor repair on the dish machine.
Correction: Repair and maintain all plumbing components ans fixtures.

Observation: Dish area and some parts of the kitchen noted in need of cleaning. The ice bin at the bar area noted as needing cleaning and adjustment to prevent water from pooling on the lid.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

- Equipment - Good Repair and Proper Adjustment
Observation: Drawer refrigerator unit was observed not operating correctly.
Correction: Repair the drawer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness*
Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F.

Observation: Plumbing connections are leaking. One dipping well was turned off until the leak can be repaired. There also appears to be a leak in the connections under the dish washing machine.
Correction: Plumbing systems and components shall be maintained in good repair.

The maintenance person had been scheduled for tomorrow for repairs to a ice tea machine and will address problems with the two reach-ins during his visit. The floor drain on the cook's line pooled water and management said that it is being capped, possibly taken out of service during the remodel and never removed.

Observation: The reach in on the cook's line and the reach in on the server's line were observed in a state of disrepair and damaged. Both were not cold holding food at 41 degrees or lower.
Correction: Repair the reach-in refrigerators to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
