Shelves storing stainless steel coffee creamers are not sealed, are absorbent, and are worn on the edges.

Explained to cook that a Notice of Violation (NOV) would be issued to the facility in regards to 0470-Segregation of raw foods from RTE foods. During the past inspections, this violation has been cited several times. During each inspection the violations have been corrected however they are not being maintained once the inspections have concluded. Have also cited the 0790 Thawing violation several times as well. The facility should be thawing out foods ahead of time under refrigeration, under constant running water, or as part of the cooking process. Under no circumstance should items be thawing at room temperature.

Significant improvement from last inspection! Suggested a bit more organization of raw foods--perhaps designate one of the 3 cook's refrigerators to be RAW FOODS ONLY and order the food in that fridge so that foods w/ the higher cook temps are on the lower shelves and foods cooking at higher temps go on the top shelves to prevent cross-contamination of the raw foods. Noticed good date marking of the RTE foods and prepared foods. Also noticed very good handwashing of both cook and waitstaff. Raw-live shellfish (primarily clam) tags are kept for 90 days however I did suggest that the tags be kept in a safe spot so they wouldn't get torn and all information on the tags could be easily read. Dishwasher santizing at 50 ppm and has a visual indicator for chlorine flow (compliant with the new requirement of the food regs). Using a bimetallic thermometer to check food temps.

Protective shields have been ordered for lightbulbs under ventilation hood-instructed PIC to obtain shatterproof bulbs to use in the meantime. Food pans (rarely used) kept beneath the hot-holding area of prep table should be kept on a cleaning frequency to prevent the accumulation of grease and food debris. Develop a cleaning frequency for the ice bin "lip" to prevent accumulations of yeast and mildew. Currently have a staff member in a ServSafe certification course. Dishwasher sanitizer at 100 ppm. Talked with PIC about date-marking ALL RTE potentially hazardous foods that are kept for 24 hrs or longer and also the better organization of raw foods in the cold-holding units. Also discussed proper thawing procedures such as thawing under running cool water, as part of cooking process, or under refrigeration. Strongly encouraged that at least 2 digital thermometers be purchased for taking temperatures in the kitchen. PIC seemed quite knowlegable and experienced in food safety.
