Please ensure that proper levels (200ppm) are met to properly sanitize all dishware and surfaces. Please follow-up with Spec Sheet to attain accurate amounts of sanitizer and mixture procedures.
**Please remember to always note TIME for Hot Dogs in Hot Roller with Time Place in unit, and Time to be discarded (within 4 hours maximum). Please create either a log sheet for daily use or stickers to indicate accurate time. Thank you.
  • Critical: Time as a Public Health Control/ Written Procedures Available (corrected on site)
    Observation: The person in charge is not able to provide written procedures for the use of time as a public health control with the following potentially hazardous food item(s): HOT DOGS ON HOT ROLLER
    Correction: If time only is used as a public health control for a working supply of potentially hazardous foods (time/temperature control for safety food) before cooking or for ready to eat, potentially hazardous foods that is displayed or held for service for immediate consumption, written procedures shall be prepared in advance and maintained in the food establishment and made available to the regulatory authority upon request. The permit holder should be able to describe the process to the Health Department. STANDARD TIME FOR PLACEMENT IS AVAILABLE ON DAILY SHEET, HOWEVER EXACT TIME INTERVALS NOT CURRENTLY BEING USED.     Observation: The operator is not testing the chemical sanitizing solution to ensure proper concentration of the solution IN 3VAT SINK AND SANITIZER BUCKETS.
    Correction: The operator shall be monitoring the concentration of the sanitizing solution using a test kit or other device. EHS EXPLAINED PROPER TESTING PROCEDURES, SANITIZER TESTED.
