Repeat violations observed. A follow-up inspection will be conducted on April 30, 2009. As discussed, before beginning food preparation each day, the person in charge shall MONITOR the following:
1. Check all hand sinks to ensure they are equipped with soap and hand towels
2. Check temperatures of all cold holding units to ensure that foods are being held @ 41 degrees or less.
3. Set up wiping cloth buckets with 50-100 PPM chlorine for storage of all wiping cloths used for food contact surfaces. Store cloths in sanitizing solution between use. Change water as needed (see 0570 under violations) .
4. Ensure that all PHF's held for more than 24 hours are date marked for disposition. (See 0830 under violations)
