Discussed with operator: 1. ensure a small diameter probe thermometer is used for taking temperatures of thin foods such as fish sticks. Operator is knowledgeable in food safety and employee health. Observed good food handling procedures, food storage, and reheating, hot/cold holding temperatures during this inspection. Facility is clean and well maintained.
