Great job with labeling spray bottles holding chemicals for identification. Good job date marking. Good job keeping foods at or below the fill line in the prep cooler which helps keep foods cold enough - Thank You! Reviewed proper cooling - cool uncovered, but protected from contamination, cool from 135 degrees F. to 70 degrees F. within two (2) hours. Ensure sanitizer is regularly checked and is between 200-400 PPM when soaking dishware and utensils in sanitizing solution. Left handout on handwashing with dishwashing sanitizing / air drying tips.

NOTE: Good job with employee beverage having both a lid and a straw and being stored in a manner that prevents contamination of food or clean dishware. Walk-in cooler and walk-in freezer were neat and well lit. Good job date marking foods. Overall kitchen was clean and well organized. Discussed only storing gloves by the hand wash sink to help encourage employees to only put on gloves after washing hands. Reminder that hand wash sinks should only be used for hand washing - do not dump food or rinse dishware.
