NOTE: Good job thawing in walk-in cooler. Great job date marking & labeling foods outside their original container. Walk-in coolers were neat and well lit. Reminder to always wash hands before putting away washed/sanitized dishes & utensils.

    Observation: Numerous employee beverages without both a lid & straw were observed on table cross from hot holding line.
    Correction: Employee beverages must have both a lid and a straw as well as be handled in a manner that prevents contamination.

NOTE: Good job date marking & labeling food outside of original container. Freezers were neat & well organized.

    Observation: Numerous beverage bottles with lids or coffee cups were observed on the table across from the hot holding line.
    Correction: Employee beverages need to have a lid and a straw.

Wiping cloth and sink sanitizer 200 ppm (quat). Pepto bismol noted in employee break area. Discussed Employee Health policy and the importance of all employees knowing what symptoms of illness to report so that the PIC (person in charge) can make the determination if that employee should be working. PIC stated that it did not belong to anyone on the current shift.

    Observation: Boxes of single service containers on floor in storage area.
    Correction: Store all single service products a minimum of 6 inches to prevent contamination.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: No soap at middle hand washing sink.
    Correction: Refill soap dispenser as needed.
  • Hand Drying Provision
    Observation: No paper towels at middle hand washing sink.
    Correction: Refill paper towel dispenser as needed at the hand washing sink.
  • Physical Facilities in Good Repair
    Observation: Grouting around floor tile is not maintained in good repair allowing water and food debris to pool in crevices.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Regrout flooring as needed.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors behind and under fryers as well as in drive thru noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Maintenance Tools - Storing Maintenance Tools (corrected on site)
    Observation: Mops, brooms, squeegies, etc. stored throughout kitchen.
    Correction: Store in designated area when not in use.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Spray bottle of cleaners left in bin with packaged raw chicken.
    Correction: Store cleaners in designated areas to prevent contamination of food products and contamination of exterior of spray bottle.
