Correction: Protect the outside W-in cooler against the entry of insects and rodents by filling or closing the gap underneath the W-in door.

Observation: There was extensive floor tile damage throughout the kitchen area(s). Floor tiles were either missing, damaged or broken.
Correction: Repair the damaged flooring and maintain same in good repair.

Observation: The door of the Outside W-in cooler has a large gap at the bottom of the floor that could serve as a rodent entry point.
Correction: Rodentproof the Outdoor W-in cooler by sealing the gap at the bottom of the W-in floor.

Observation: Found that there was an insufficient amount of lighting inside of the Outdoor W-in cooler
Correction: and that there were many burnt out light bulbs in areas where food preparation was being done

Observation: The flooring throughout the kitchen area was damaged. Many floor tiles were missing
Correction: and the floor of the Outdoor w-in cooler was very rusty and needs to be replaced.

Observation: Flooring that is under counters and hard to reach places was dirty and in need of cleaning.
Correction: Periodically clean the flooring in those under counters and in hard to reach places.

Discussed complaint with PIC, Bill, and stressed the importance of when to wear/not to wear gloves and when to wash hands. Wiping cloths were noted to be relatively clean.
Food Permit was re-issued today.HM

Observation: Food employees were wearing watches on their wrists
Correction: No watches are to be worn by food employees while handling foods.
- Pressure Measuring Devices, Mechanical Warewashing Equipment
Observation: The pressure gauge on the supply line for the hot water sanitizing rinse of the warewashing machine was recording water pressure greater than 25 psi and closer to 60 psi.
Correction: Have pressure gauge checked. It should operate between 15 - 25 psi according to the data plate on the dishmachine.
- Plumbing System Maintained in Good Repair
Observation: The plumbing connections under the counter for placing dirty utensils prior to warewashing were leaking water onto the floor.
Correction: Repair leaking plumbing connections.
- Light Bulbs Protective Shielding
Observation: A light bulb shield at the Bread display/hot bar area was broken and needs to be replaced.
Correction: Replace the broken light bulb shield.

Observation: The flooring of the Outdoor W-in cooler was in need of cleaning/refinishing.
Correction: Clean flooring of the W-in cooler and maintain it in a sanitary condition.

Discussed the complaint with the PIC and District Manager. The routine inspection did not identify any of the concerns that the complainant raised. Golden Corral conducts their own food handler training. To determine whether the Golden Corral's food handler program addresses all of the 14 class topics that we cover.
- Equipment - Good Repair and Proper Adjustment
Observation: The door gasket to the Outdoor W-in cooler was worn and needs replacing.
Correction: Repair or replace the door gasket of the Outdoor W-in cooler.
- Plumbing System Maintained in Good Repair
Observation: The floor drain underneath the dishmachine was over flowing and needs to be unplugged.
Correction: Plumbing systems and components shall be maintained in good repair.
- Outer Openings - Protected
Observation: Found openings along the flooring of the doorwaythat could serve as rodent entry points.
Correction: Protect the outdoor W-in cooler against the entry of rodents by closing holes and other gaps along the entranceway flooring.

Observation: The flooring of the Outdoor W-in cooler was soiled and in need of cleaning.
Correction: Clean the floor of the Outdoor W-in cooler.
