Observation: The Men's washroom door was not provided with a self-closure device.
Correction: Provide a self-closure device for the Men's washroom door.
- Lighting, Intensity
Observation: Found lighting in the cooking/food preparation area(s) to be dim ( between 20 and 30 foot candles).
Correction: Increase the lighting so that there is at least 50 foot candles in the cooking/food preparation area(s).
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Found kitchen floor cluttered making the floor not easily cleanable. Also, area over floor flushed grease trap by dish machine was in need of frequent cleaning.
Correction: Unclutter kitchen floor to allow for easy cleaning of the floor. Also, clean area over floor mount grease trap on a frequent basis.

Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces:metal food pans. Pans were observed with old labels on sides after cleaning.
Correction: Maintain nonfood-contact surfaces of equipment clean.

Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination
Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.
- Handwashing - Using a Handwashing Lavatory (corrected on site)
Observation: The handwashing facility located at the kitchen is blocked, preventing access by employees for easy handwashing. Sink was full of towels and had a half full trash bag hanging from faucet.
Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the towels and trash bag preventing its use.
