If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Overall, the facility is very well maintained and clean. The person in charge was able to respond correctly to various questions about food safety practices, reporting policies, foodborne illnesses, and cooking, cold holding, and hot holding temperatures. The dining area and rest rooms are also well kept. Proper thawing (refrigeration) techniques were observed during the inspection. The noted violations were corrected on site. A permit will be issued.
