NOTE: Overall facility was neat & well organized. Good separate storage of chemicals away from/below foods. Discussed need for 3-compartment sink if need arises for manual dish washing AND a hand sink needed near dish machine to encourage proper handwashing between putting dirty dishes in and taking clean, air dried dishes away.
  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: A food handler was observed washing his hands for less than 8 seconds at the prep sink.
    Correction: Hands should be washed with soap & warm water for at least 15 seconds, rinsed with clean water, and dried with a single-use papertowels. Always wash hands before putting on gloves so the glove, which touches ready-to-eat food, doesn't become contaminated.

No violations observed during today's (9/29) inspection. NOTE: Good job storing raw meat & eggs at bottom of fridge. Overall facility was clean & organized. An employee health policy was left. Discussed date marking (7-day max) and washing hands prior to putting on clean gloves. Discussed having 3-compartment sink if need arises for manual dish washing.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 165ºF.
    Correction: Have unit repaired ASAP. Sanitize dishes in dish sink until unit can reach 180°. Please call when unit is repaired.

Please arrange the 3-door cooler in such a way that the food items for catering are kept separate from school food and all prepared RTE foods have date labeling.

    Observation: The prepared ready-to-eat (RTE) foods in the refrigeration unit are not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent (repeated violation)
    Observation: The nonfood contact surfaces of the prep table and the pallet underneath the milk cooler are not corrosion resistant, nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
