The purpose of today's visit was to conduct the first risk factor assessment inspection after a change of ownership. The main CFM (the Food & Beverage Director) is a candidate for the Active Managerial Control (AMC) award. The following AMC practices were observed during today's inspection: all chefs have obtained their Certified Food Manager certificates, excellent date marking, easily accessible Employee Health training documents, easily accessible supplier letters, equipment temperature logs, back up ambient air thermometers inside Walkin Coolers and third party audits conducted regularly.
Handwashing Sink / Used for Hand Wash Only (corrected on site) Observation: Observed the handsink at the cafe/bar area being used store pitchers.
Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands. PITCHERS REMOVED AND CFM REMINDED EMPLOYEE THAT HANDSINKS ARE ONLY FOR HANDWASHING AND NOT STORAGE.
