Discussed backflow prvention of the 3 bay sink with the PIC, the spray nozzle is to be above flood level of the sink. Also discussed proper reheating procedures for the meatballs and the pizza sauce. No violation noted during this evaluation.

Kitchen appears clean and organized. Handsink stocked with soap/towels. Employees are washing hands and wearing gloves when handling ready to eat foods. All ready to eat foods are properly date-marked for disposition, including those foods associated with the convenience store. Employee health policy is available in kitchen. Good food/equipment temperatures observed. Discussed the following with staff: insuring that nothing is stored in/on handsink (wiping cloth moved to sanitizing bucket at front register)
Critical: Backflow Prevention, Air Gap* Observation: An air gap between the water supply outlet and the flood rim level @ the 3-compartment sink is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap. Or, provide in-line backflow prevention on "neck" of spray wand.

Discussed following with staff: providing easily accessibly air-temperature thermometers for refrigeration units
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* Observation: Ham used for ham sandwiches in convenience store is not properly date-marked for 7-day disposition. This is not a Subway violation.
Correction: Place date on ham the day it is sliced and placed into refrigeration. If all ham will not be used within 7-days it shall be discarded. Or, place portion of sliced ham in freezer to be used at a later date.
Temperature Measuring Devices - Ambient Air and Water Observation: Air temperature thermometers must be functional and easily accessible in all refrigeration units (rear glass door refrigerator/front under-counter refrigerator).
Correction: Provide a temperature measuring device that is easily readable and accurate to +/-3 degrees Fahrenheit in the intended range of use.
Critical: Equipment - Food Contact Surfaces and Utensils Observation: Food contact surfaces of the slicer used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues. This is not a Subway violation. The slicer is associated with the service of ham sandwiches in the convenience store.
Correction: Clean food-contact surfaces of slicer no less than every 4 hours to prevent the growth microorganisms on those surfaces. Sanitizer should be properly washed-rinsed-sanitized at the end of each use.
