Breakfast ended just prior to inspection, and staff was preparing lunch. The milk box in the cafeteria was reading approximately 43'F during inspection, however it had been open for most of breakfast. PIC stated the milk box typically has an ambient air temperature of 32'F.

  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site) (repeated violation)
    Observation: Quaternary ammonium sanitizer solution in the three compartment sink was measured at over 500 parts per million. PIC added fresh water to the solution and sanitizer was measured at 400 parts per million.
    Correction: Utilize this formula of quaternary ammonium at a concentration of 150-400 parts per million when applying to food contact surfaces

  • Equipment - Cutting Surfaces
    Observation: There are a few small cutting boards stored near the three compartment sink which are observed to be heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: three pairs of tongs found hanging in clean equipment storage. The tongs were re-located to the three compartment sink to be washed, rinsed and sanitized properly.
    Correction: Clean and sanitize these surfaces for food contact.
  • Mops - Drying Mops (corrected on site)
    Observation: Mops not hung up to air dry. Mop was observed sitting in bucket of water used yesterday afternoon.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
