Overall, facility is clean and in good repair. Both reach in freezer units were not in operation today. Work orders have been placed and maintenance has ordered parts for the units to be repaired. Observed facility to be clean and in good repair at the time of the inspection. PIC was beginning to prepare Turkey Breast for school's Thanksgiving Luncheon. PIC states final cooking temperature of turkey breast will reach 170'F or higher. Discussed with the Person in Charge: Some lime-scale build up was noticed around faucets of the three compartment sink, along the coving tiles at the floor drain where the steamers are emptied and along some portions of the dish machine. Operator stated she de-limes the machine weekly. The Environmental Health Specialist will contact Office of Drinking water to discuss recent water samples. PIC has stated the build-up seems to be happening more frequently this year, and that de-liming the dish machine will now be done 2x per week until the situation has been resolved. Otherwise, facility is noted to be very clean and well maintained. Good hand washing and glove use practices were observed during today's inspection.
