    Observation: The nonfood contact surfaces of the following equipment have accumulations of grime and debris: 1. the exterior of the slicer 2. the stainless steel racks/trays in the dry storage room.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

-Metal shavings observed along the sides of the can opener blade, replace the blade to prevent contamination of food.
-Cover the light bulb in the display reach in cooler on the line.

-Work orders are in place for the following: seal under the back door, light in the walk in freezer, can opener blade replacement, and resealing the floor/wall tile on the line.
-Quaternary ammonium 146 sanitizer in the 3 compartment sink measured at 200 ppm.
Excellent handwashing procedures and gloves use observed throughout the inspection, great job by all staff members!

The above observations and the following were discussed with the person in charge:
-The milk box display case was observed to be in disrepair. The PIC has a work order in to replace/repair this cooler. Observed foods stored in this cooler on ice during the inspection as there is not room to store foods in other coolers. Please repair/replace this cooler as soon as possible to sandwiches, salads and milk can be held at 41'F and below.
-A work order is in place to seal the gap under the back door and replace the broken floor tiles in this area.
-Please clean the ceiling vents over the 3 compartment sink.
-Please clean the window sill and the floor under the window. Ensure the floor drain by the 3 compartment sink is cleaned.
-Observed metal shavings along the sides of the can opener blade, ensure the blade is changed.
The Quaternary Ammonium 146 Sanitizer in the 3 compartment sink was measured at 200 ppm.
Staff members are doing an excellent job with cleaning and sanitizing all equipment and surfaces, thanks!

-Please contact pest control in regards to any pest activity in the kitchen. Provide information to the health department regarding further treatment if needed.
-The quaternary ammonium 146 sanitizer in the 3 compartment sink was measured at 200 ppm.

-Please replace the sweep on the bottom of the back door of the kitchen.
-Please clean the ceiling vents over the 3 compartment sink.

The kitchen and equipment were observed to be very clean, great job by all staff members!
