    Observation: The nonfood contact surface of the wall under the three vat sink has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects .

    Observation: Plumbing connections at the three vat sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.

    Observation: Guacomole and Diced tomatoes were improper cold temperatures
    Correction: Ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Temperature Measuring Devices - Food (corrected on site)
    Observation: The food temperature measuring device (degrees F) located in a refrigerator was not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 2 degrees Fahrenheit in the intended range of use.

    Observation: Less than 20 foot candles of light was noted in the Men's room.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms

The purpose of this visit requested by management was to follow up on a fire in the restaurant. Renovation on the restaurant was completed so the restaurant was approved to open.

The purpose of this visit was to evaluate the progress made after the fire on 11/7/2013. The restaurant still has an odor and they are still working on structural damage. The food prep area is clean as well as the refrigerators where the food will be stored. Therefore, they were given partial approval to operate their window service only and bring food products in. They will call to get total operational approval when the odor is acceptable.

The purpose of this visit was to investigate a fire. The cause was unknown. It started in the dining area.
They were instructed to discard all exposed foods, thoroughly clean the entire restaurant, sanitize all food contact surfaces and call me when ready to open. A "closed" sign was posted on the door.

    Observation: Water from all handwashing sinks was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Correction: Repair and maintain all plumbing components and fixtures.

    Correction: Cease all food service operations until you receive a permit to operate from the health department.
