NOTE: Walk-in cooler was clean & well organized. Good job storing chemicals separate/away from foods. Ensure accurate working thermometers are in the warmest part of all coolers (usually near the door). Good job washing hands prior to putting on gloves.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation) Observation: Coconut pie (48 degrees F.) and cheesecake (49 degrees F.) were observed being stored in an open air buffet style cooler near the register out of temperature.
Correction: Ensure cold foods are held at 41 degrees F. or below. Also keep accurate, working thermometers in the warmest part of coolers. Employee corrected during inspection by putting pies that had been out less than an hour back in the walk-in cooler (32 degrees F.).

NOTE: Cooler was neat & well organized, all employees had proper hair restraints, good job storing chemicals separate from foods. An employee health policy was explained and left at firm.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Chocolate pie (44 F.) and pecan pie (49 F.) were found being stored in an open air buffet style cooler near the cash register out of temperature.
Correction: Ensure cold holding temperatures are 41 degrees F. or below
Temperature Measuring Devices - Food Observation: No metal stem probe thermometer (0-220 degrees F.) was available to monitor cooling & cold holding temperatures.
Correction: Obtain a probe thermometer and monitor food temperatures.
Sanitizing Solutions, Testing Devices Observation: No chlorine sanitizer test strips were available.
Correction: Obtain sanitizer test strips & monitor sanitizer strength.
