NOTE: Good job washing hands prior to putting on gloves. Discussed monitoring the temperature of cooling food to ensure food cools from 135 degrees F. to 70 degrees F. within 2 hours. Stirring or putting on ice can help speed up cooling. Left cooling handout & Left 2015 ServSafe training schedule - encouraged to attend.
Utensils - In-Use - Between-Use Storage (corrected on site) (repeated violation) Observation: The ice scoop was observed being stored inside the ice machine with the handle touching ice that is consumed by customers.
Correction: Store the ice scoop in a manner that prevents cross-contamination to the ice such as in a clean bin or in ice with the handle straight up (not touching ice).
Outer Openings - Protected Observation: The outdoor openings were not screened or otherwise protected against the entry of insects & other pests. Flys were observed today.
Correction: Install screening or other mechanism that can be opened to serve customers, but be closed to keep out pests from exposed food.

NOTE: An employee health policy was explained & left at firm. Discussed only washing hands at sink & washing hands with soap for at least 15 seconds then drying hands on paper towels.
Utensils - In-Use - Between-Use Storage (corrected on site) Observation: The ice scoop was observed being stored inside the ice machine with the handle touching the ice that is consumed by customers.

Temperature Measuring Devices - Food Observation: No metal stem probe thermometer (0-220 degrees F.) was available to monitor reheating, cold holding, & hot holding food temperatures.
Correction: Obtain a probe thermometer & regularly monitor food temps.
Temperature Measuring Devices - Ambient Air and Water Observation: No thermometer was in the cooler holding time control for safety foods (dairy, meat).
Correction: Obtain a thermometer & place in cooler.
Sanitizing Solutions, Testing Devices Observation: No sanitizer test kit was available.
Correction: Obtain a test kit & monitor sanitizer strength.
Handwashing - Using a Handwashing Lavatory Observation: Access to the only hand sink was mostly blocked due to a fan, trash can, & drink cooler.
Correction: Maintain hand sinks so they're stocked with soap & paper towels and are accessible for employee hand washing.
