Facility is clean and orderly. Proper hand washing observed. Discussed with PIC using time as public health control for breadstick dipping sauce in the front warming unit, using the hand sink in the back for hand washing only.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site) (repeated violation)
    Observation: An employee was observed drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food.

The following items still must be addressed: need to thoroughly clean fan grates and cover foods stored beneath compressor
  • Non-Food Contact Surfaces (repeated violation)
    Observation: The nonfood contact surface of the fan grates in the walk in refrigeration require cleaning. Additionally, the condensate line below the cooling unit should be made cleanable. No uncovered foods should be stored below this unit until addressed.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Date marking observed in walk in refrigeration. Lighting intensity has been improved in walk in. Dough racks in walk in appear to have been cleaned. Discussed the following: the need to thoroughly wash rinse sanitize all food contact surfaces

    Observation: Employee drinks are being stored in areas where they may contaminate food, clean equipment, utensils or other items needing protection. (above pizza prep area
    Correction: in pizza prep refrigeration)
  • Food Storage - Clean and Dry Location (corrected on site)
    Observation: Food stored in a location where it is subject to splash, dust or other contamination beneath cooling unit in walk in refrigerator.
    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the fan grates in the walk in refrigeration require cleaning. Additionally, the condensate line below the cooling unit should be made cleanable. No uncovered foods should be stored below this unit until addressed.

  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: various sheet pans, lexan containers, can opener blade. Many pans/knives were observed soiled and stored with "clean" equipment and utensils.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. These items should be air dryed and inspected for cleanliness on regular basis.
  • Hand Drying Provision
    Observation: No continuous towel system that supplies the user with a clean towel has been provided at rear handsink. Dispenser needs repair or replacement. Front handsink is accessible.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Kitchen appears clean and organized. Handsinks are stocked with soap/towels/sign. Employees are washing hands at appropriate times. Employee health policy is available in kitchen. Good food/equipment temperatures observed. Good sanitizer level observed. Ready to eat foods are date marked. Discussed following with manager: regular cleaning of dough racks/storage racks in walk in refrigeration
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of encrusted grease deposits or other soil on the following non-food contact surfaces: dough racks in walk-in refrigeration.
    Correction: Clean and sanitize these surfaces on regular basis.
