Observation: The nonfood contact surface of the fan grates in the walk in refrigeration require cleaning. Additionally, the condensate line below the cooling unit should be made cleanable. No uncovered foods should be stored below this unit until addressed.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.

Observation: The food-contact surfaces of the following equipment were not observed sanitized: various sheet pans, lexan containers, can opener blade. Many pans/knives were observed soiled and stored with "clean" equipment and utensils.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. These items should be air dryed and inspected for cleanliness on regular basis.
- Hand Drying Provision
Observation: No continuous towel system that supplies the user with a clean towel has been provided at rear handsink. Dispenser needs repair or replacement. Front handsink is accessible.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
