Violation: 1700 - Corrected During InspectionCritical Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations.
Comments:
Also investigated reported lack of dish detergent, wet-nesting of sanitized utensils and food debris on cleaned dishes. These problems had been fixed by kitchen staff prior to this inspection. Reported instance of cooling unit condensate running over tomatoes in walk-in cooler had also been resolved. No leaking condensate found at time of inspection, and all foods had been removed from beneath cooling unit. Follow-up visit is planned for 11/07/08 to verify sanitizer is working properly.
