    Observation: Employee beverages improperly stored.
    Correction: Instruct staff to drink only from closed containers such as a cup with a lid and straw.

    Observation: Ware washing machine not equipped with a pressure gauge.
    Correction: Equip the machine with a pressure gauge that measures and displays the water pressure in the supply line immediately before entering the machine.
  • Sanitizing Solutions, Testing Devices
    Observation: No test strips available.
    Correction: Provide test strips and comparator for each sanitizer used.
  • Critical: Equipment and Utensils - Before Use After Cleaning*
    Observation: Wares cycled through the dishmachine are not being sanitized.
    Correction: Discontinue use of the machine until it has been repaired of adjusted to provide an utensil surface temperature of 160°F or above.

    Observation: A backflow prevention device is not observed on the line serving the dishmachine.
    Correction: Provide a backflow prevention device at each point of use.
