0450 - Critical Employees observed handling ready-to-eat (RTE) food with their bare hands. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
0550 - Repeat Plastic drinking cup used for dispensing ice. Violation: 3080 - Less than 10 foot candles of light was noted in the stove area. Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

Sanitizer 100 PPM. One food worker was observed washing hands properly. Test strips provided. Permit issued when annual fee received from owner.

Drain the basin(s) and refill with fresh water and cleaning agents/sanitizers added as required for effective cleansing, rinsing and sanitization of equipment and utensils.

Note: Owner intends to put wheels under new chest freezer. Fan in restroom has been repaired. Further discussion on the lack of lighting inside the walk in, however the floor was clean today. We discussed cooling practices of beans and chicken. Owner was given package of handouts. Employee health was stressed.

Comments:
Final opening inspection. Wash, rinse and sanitize all food contact surfaces and equipment. Ensure ice bin at soda station is sanitized. Metal stem thermometer was calibrated. County approval to open given 11/29/07 by Joe Basilone. Final electrical and plumbing on 11/30/07. I recommend starting temperature logs on refrigeration units. Dishmachine to be checked daily (each shift is preferable). THIS IS NOT A PERMIT TO OPERATE.
