When cooling food, do not cover the food. The beans that had been cooled were covered while they cooled, this could keep the heat in and prevent it from cooling quickly enough. The beans were in a shallow pan and directly on the wire rack in the fridge which are good steps in cooling. The goal is to get from 135°F to 70°F in 2 hours and to 41°F in 6 hours. When reheating food, it must reach 165°F in two hours. Good prevention of barehand contact and prevention of cross contamination.

Correction: Keep the hand sink free for handwashing and only use it to wash hands.
