Observed effluent spray forth from sanitizer sink in 3-compartment sink when dishmachine drained. This is a source of contamination to area. Have a plumber check it out. Also spray hose has loosened its springing action and it may be a backflow problem if and when it falls below sink level. New oven, refrigerators and freezer are installed. Construction is complete. Send new workers to food handler's class. Packet of information given to PIC. Establishment is doing a good job monitoring sandwich temps in display. Consider temping food upon delivery. Permit issued.
