- 7-202.12(A)(1)-(4) - Corrected During Inspection Critical The concentration of the quaternary ammonium compound sanitizer solution was measured at 300 ppm.
Maintain the concentration of the quaternary ammonium compound sanitizer solution at 200 ppm. Note: Add more water to dilute the sanitizer. Restest to ensure it is at 200 ppm before sanitizing food contact surfaces. - 4-302.14 - Corrected During Inspection There is no test kit located in the facility for monitoring the concentration of the QUATERNARY AMMONIUM COMPOUND sanitizing solution.
A QUATERNARY AMMONIUM COMPOUND test kit or other device that accurately measures the concentration in ppm (mg/L) of sanitizing solutions shall be provided.
The purpose of today’s visit was to conduct a routine inspection.
** Time as a Public Health Control has been implemented for the milk (non-fat, whole, half & half) in the carafes at the customer self-service station. The carafes are placed at the station and then a timer is set for 4 hours after which the milk in the carafes is discarded. A copy of the Time as a Public Health Control document will be placed on file at the Health Department.

- 43.1-3-4(a)-(h) - The Person in Charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action. - 5-202.12(A) - The handwashing sink at the establishment provides water measuring 100-130F. No cold water was provided.
A handwashing sink shall be equipped to provide both cold water and hot water (at least 100F) at the combination faucet..
The purpose of today's visit was to conduct critical procedures inspection on a new establishment within Giant Foods #747. The certified food manager shall obtain a CFM photo identification card from ORS, Interactive and provide a copy to Attention:Lucia Laguzzi at (703) 385-9568 by July 9, 2008.
