This visit was made to conduct a follow-up inspection. Menu has been corrected and asterisk has been added to the Chef's Breakfast (poached egg).

    Observation: Food packaged in the establishment is not labeled in accordance with Law (packaged food in display case). Guidence document sent to chef.
    Correction: Food packaged in a food establishment shall be labeled as specified in Law including 21 CFR 101 - Food labeling, and 9 CFR 317 Labeling, marking devices, and containers.

  • Critical: No Bare Hand Contact with RTE Foods (corrected on site)
    Observation: Food employee(s) was observed handling the following ready-to-eat foods using their bare hands: bisquits, cheese (corrected onsite)
    Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall be using suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods. Proper handling of food and effective handwashing procedures will help prevent foodborne illness.

  • Consumer Advisory Required for Raw or Undercooked Animal Food
    Observation: A review of the menu with the foodservice operator indicates that there is no consumer advisory for the following food item(s) that may be served raw and/or undercooked: "chefs breakfast" with a poached egg. Please email corrected menu.
    Correction: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish is served or sold raw or undercooked the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means.
  • Equipment / Good Repair / Operation (corrected on site)
    Observation: The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41°F or less (flip top glass display). All products that were placed there at 7 am were moved into another unit.
    Correction: Refrigerators shall be capable of holding foods at a temperature of 41°F or below. Repair the unit(s) immediately. Foods exposed to temperature abuse for over 2 hours shall be discarded, otherwise, the foods shall be stored in properly operating refrigerators.

This visit was made to conduct a pre-opening inspection. The following items require correction:
1) Provide dumpsters outside (suppose to be delivered by 4:30 today)
2) Provide updated menu
All other items from 4/28/15 pre-opening inspection have been corrected. Thank you!
Recommend issuance of Alexandria Health Department (AHD) permit. This report shall serve as you permit to operate until your official permit is received. Any changes to floor plan, equipment, or menus/special processes shall be pre-approved by AHD.

This visit was made to conduct a courtesy pre-opening inspection. The following items require attention/correction:
1) Provide new layout of equipment/floor plan to show changes.
2) Downstairs kitchen area floor needs the crack in the concrete sealed
3) Finish running drains for ice machine and espresso machine downstairs
4) Provide weather stripping around front & back doors to seal threshold
5) Correct 3-compartment sink drain so that no water is running onto floor.
6) Provide drainage for walk-in cooler
7) Seal holes in floor of walk-in cooler
8) Provide self closer for staff restroom door
9) Seal around sink in staff restroom
10) Seal hatch over dry storage/walk-in cooler
11) Provide dumpsters
12) Provide corrected menu with eggs disclosed
13) Provide 50 foot candles of light at upstairs cook line
