The 2 DR reach-in needs to be repaired so it is able to maintain food at less than or equal to 41 degrees F. Note: remember no to fill food pans above the "dip" line. Permit will not be issued until 2 DR reach-in cooler is repaired.
  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor (the dry storage rack was missing the wheels and was less than 6 inches above the floor)..;Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Food - Miscellaneous Sources of Contamination (corrected on site)
    Observation: The cleaned bread forms were being placed to dry over the 3 compartment faucet and exposed to possible contamination. Forms were rewashed and sanitized and dried in a clean and sanitized surface.
    Correction: Protect food from miscellaneous sources of contamination.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: The food in the 2 DR reach-in cooler was cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. (relocated to walk-in freezer for a short time and then transferred to the walk-in cooler. Repair before placing into operation.
