Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after working with raw hamburger which contaminated his/her hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Corrected : Three Compartment Sink Chlorine Sanitizer 50 ppm - Okay. The chlorine sanitizer will be used until the Quats sanitizer distributor comes to fix the problem with the Quats sanitizer. Note: There is a slow drip coming from the ceiling in the kitchen which is not falling onto clean equipment or food. Maintenance has checked on this and cannot find the source or location of the slow drip and only occurs when it rains. The employees use slip resistant shoes on a daily basis and proceed with extra caution to ensure no falls occur.

Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

The walk-in cooler is working and currently working to repair the water hose nozzle drip at the two compartment sink. Note: There is a thermometer hanging up in the walk-in cooler until the digital display thermometer is fixed. Note: Suggest posting a keep door closed sign on the one door reach-in refrigerator to make sure the cool air stays inside the unit between uses.

- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: The following foods were cold holding at improper temperatures in the walk-in cooler: Sliced Tomatoes 53°F, Half & Half 51°F, Raw Hamburger 50°F, and Ice Cream Mix 46°F.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Currently allowing air from the walk-in freezer to enter the walk-in cooler until repair man arrives today to fix.
