  • FOOD PRODUCT THERMOMETER WAS CALIBRATED DURING INSPECTION AND MUST BE CALIBRATED AS OFTEN AS NECESSARY (ONCE EVERY TWO WEEKS OR SO).
  • OBSERVED SOME TEMPERATURES ON LOG INDICATING THAT POTENTIALLY HAZARDOUS FOODS WERE WELL BELOW 140* F (SOME WERE 110* F) WHEN DELIVERED FROM CATERER. AS DISCUSSED, TRAINING MUST OCCUR ON TEMPS AND PROCEDURES.
  • PROVIDE ONE CERTIFIED FOOD MANAGER WHO IS RESPONSIBLE FOR THE DAY TO DAY FOOD SERVICE ACTIVITIES IN TERMS OF PREPARING/SERVING FOOD. DAN WHITE IS CERTIFIED, HOWEVER IS A REP OF THE CATERER AND NOT INVOLVED WITH PREPARATION OR SERVING.
  • REPLACE FOOD PRODUCT THERMOMETER. OBSERVED 52* F FOR EXISTING DIAL THERMOMETER WHEN CALIBRATED IN ICE WATER. TEMPERATURE SHOULD BE 32* F.
