Rule Violation and Requirement: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically: Pizza dough prep reach in is holding food at 48 F. An ambient air temperature of 45 F was observed inside. Repair this unit so that it holds food at 41 F or below. CORRECTION: If food inside longer than four hours it is discarded, otherwise moved to another unit.
Rule Violation and Requirement: VIOLATION OF SECTION 7-201.11 *PRIORITY* Poisonous or toxic materials are not properly separated or located, specifically: Hand soap is stored above food products and single use dishes in the employee restroom. Do not store chemicals with food. Do not store food, dishes, paper/plastic goods or linens in the restroom. CORRECTION: Items rearranged.
